Can anyone tell me if we can set-up the file uploader to scan a file for viruses after it has finished uploading, and then be able to call the functions to save to a SQL DB server?

We don't have information nor support that capability, but I suggest doing some general web searches for how-tos. You essentially need to setup anti-virus on your web server and perhaps there are APIs within the anti-virus software to hook FileUploader to.
